Today we will cook a recipe for our cookbook called Lemon Dill Baked Cod!!

I will share with you why I picked this name for our third cookbook and a few stories.

We picked this recipe to show you today because it's one of my recipes we made in February 2020!

In this cookbook I share with you stories of growing up in a small community in UpperIslandCove Newfoundland and Labrador in the mid 1960's. We didn't have I-phone's, computers or electronic games to play with, we played outside in the fresh air and with our friends. This cookbook reflects on those day's and having loving parents and amazing role models.

Ingredients
- Cod fillets - 1 per person
- Onion - 2 medium, peeled and sliced
- Fresh lemon - 1 or 2 sliced
- Fresh dill - 4 or 5 stems
- Sea salt - pinch to taste
- White pepper - pinch to taste
- Onion Powder - Pinch to taste
- Butter - 2 tbsp
- Veggie broth - 1 cup
- Fresh garlic - 2 or 3 cloves
Instructions
Recipe:
Side dish: 1 cup rice ½ tsp sea salt 2 cups water 1 tbsp butter Mixed veggies of choice
Method for cod: Prepare 6 pieces of cod fillets, by checking for any bones, skin remove and rinsed until cold water.
Then peel 2 white onions and slice, place in a roaster or casserole pan.
Layer cod fillets over top and season with sea salt, pepper and grated garlic, fresh or ground dill and slices of lemon with peel.
Add one cup of vegetable broth or stock and cover with a lid or foil wrap.
Bake in a preheated oven of 375ºF for 35 to 40 minutes or until foil tender. Serve with fresh veggies of choice and steamed rice.
Method for steamed rice: In a medium saucepan add two cups of water and boil for a few minutes on medium heat, then add sea salt and rice.
Stir and then let cook for 5 minutes with lid off or part off, stirring occasional and lower the heat to warm add butter, then cover. Toss rice occasionally until ready to serve.
Steamed or roasted veggies of choice and serve with fresh rolls or bread.…
Bonita’s Tips: Making sure all bones are removed from cod filets before making this dish. Buy boneless and skinless for less work.
